Keeping salmon fresh
Heritage Atlantic Salmon tastes best when you buy and eat it that same day. But when you need to store fresh Heritage Salmon, it's good to know that you can store it safely and easily. What's more, you're in complete control because you know exactly how long your salmon has been in the fridge or freezer.
You can keep salmon in the fridge for up to 2 days, or in the freezer for up to 8 weeks.
Basic tips
- Keep salmon refrigerated until you're ready to cook it.
- Leave the skin on during cooking. It helps to hold the fish together when you turn it. The skin comes off easily after cooking.
- Cook salmon just until the meat begins to change colour and becomes flaky.
- Remember salmon will continue to cook even after you remove it from the heat source, so be careful not to overcook it.
In the fridge — tips
- Keep salmon in its original wrapping and put it in the coldest part of the fridge.
- Be sure to use the salmon within one to two days, and keep refrigerated until cooking.
- Wrap and refrigerate any leftover, cooked salmon.
You can keep cooked or uncooked salmon in the fridge for up to 2 days.
In the freezer — six easy steps
- Rinse your salmon in cold water, pat dry and cut into desired portion sizes.
- Place the salmon in freezer bags, heavy foil or freezer wrap. Or put your salmon in air-tight, moisture-proof, freezer-friendly containers.
- If using containers, be sure to use freezer tape around the edge of the lid to keep the seal tight.
- Label and date the salmon packages.
- Place packages in freezer in a single layer to ensure they freeze quickly. Leave air space around each package to encourage the circulation of cold air.
- Once packages are frozen solid, you can stack them.
You can keep salmon in the freezer for up to 8 weeks.
Thawing salmon — hints
- Defrost salmon in the refrigerator overnight or, for quicker results, defrost under cold running water.
- If the salmon is tightly wrapped in plastic, place it under cold running water until just defrosted. This will take only a few minutes.
- Don't worry if your salmon has a few ice crystals. You can still cook it with good results.
Food Safety — a few things to remember
- Avoid cross-contamination by thoroughly washing cutting boards and counter tops with hot, soapy water after handling raw salmon.
- Wash your hands thoroughly with hot water and soap before and after handling raw salmon.
- Throw away any leftover salmon marinade.
- Use a clean plate to bring cooked salmon to the table.
- Promptly refrigerate any leftover, cooked salmon and use within two days.
